For 12 pancakes you'll need 4 good eggs, 4 spoons of milk (I use plant-based milk), 4 spoons of all-purpose flour, 1 big spoon of vanilla sugar, a little bit of oil or butter, a pinch of salt and one small spoon of baking powder.
Divide the egg whites and the egg yolks into separate bowls. Mix well the egg yolks with milk and then sift the flour with the baking powder into the bowl. Add the sugar.
In another bowl whip the egg whites with a pinch of salt until stiff texture. Gently fold the egg whites into the egg yolk mixture with a spatula.
Brush the pan thinly with the oil, put two spoons of the batter for each pancake, and cover it with the lid to make them slightly fluffy.
Cook for two or three minutes, then flip.
